Apple Pie Overnight Oats

Great for breakfast & even after a workout!

Its a new year 2023! In 2022 I created a lot of great recipes & really expanded on my creativity! This year we gonna turn it up even more. I love a good breakfast to start the day. You can never go wrong with oats & fruit! This is a simple recipe that anyone can make.

Serving Size

Serves 2 people

Double recipe for more servings

Cooking Time

Prep 15 mins

Cook 10 mins

Recipe

1 mason jar

1/2 cup of old fashioned oats

1 whole apple diced in small pieces

3/4 cup of almond milk or (plant based milk of choice)

1/4 cup of chia seeds

1/4 cup of dairy free yogurt (I used coconut milk)

2 tablespoons of agave nectar (maple syrup works well too)

1 graham cracker for topping (optional)

1 cinnamon stick for topping

1 tablespoon of cinnamon

1/2 tablespoon of vegan butter

Instructions

1. In a hot pan sauté the apples in a lil vegan butter.

2. Add the cinnamon & agave to the apples. Stir consistently until thoroughly combined & apples are caramelized.

3. Take off heat & set aside.

4. In a mason jar add the oats, almond milk, yogurt, half of the caramelized apples (the other half will be used for the topping) & chia seeds.

5. Set in fridge to chill over night. (If eating sooner 1-2 hrs is fine.)

6. Take oats out of fridge & top with remaining apples, one cinnamon stick, a sprinkle of cinnamon.

7. Eat & enjoy!

Paprika Roasted Cauliflower

Great for the fall time & a way to use leftover veggies.

Recently crafted this recipe at work & it was super fire. Loved the simplicity & how tasty it is.

Super simple recipe one you definitely want to add to your culinary bag. You gonna love it.

Serving Size

Serves 2 People

Double or Triple recipe for more servings

Cooking Time

Prep 10 minutes

Cook 20 Minutes

Recipe

1 head of cauliflower

1/2 cup of grape tomatoes

5-6 sweet peppers

3 tablespoons of paprika

2 tablespoons of olive oil

1/2 tablespoon of sea salt

1/2 tablespoon onion powder

1/4 cup sliced onions

sprinkle of parsley

Instructions

1. Preheat oven to 400 degrees.

2. Cut cauliflower in to thick pieces.

3. Take the grape tomatoes, sweet peppers & cauliflower & add them to a baking pan.

4. Drizzle olive oil, paprika, sea salt, & onion powder.

5. Mix everything well so the veggies are well coated.

6. Bake for 20 minutes until veggies are soft but slightly firm.

7. Plate up & sprinkle chopped parsley on top.

8. Eat & enjoy.

This is the recipe I used to make these fire paprika roasted cauliflower. Super tasty definitely add this to your rotation!

Classic Chickpea Curry

One of my favorite all time dishes.

This was like the first recipe I really mastered when I first went vegan. Since then I haven’t looked back.

Great recipe for beginner culinarians. Its very simple & super tasty. One that will be a go to recipe for you.

Serving Size

Serves 4 people double recipe for more servings!

Cook Time

Prep 15 mins

Cook 20 mins

Recipe

1 can of rinsed chickpeas

1 can of coconut milk

1/2 cup of diced yellow onions

1/4 tablespoons of minced garlic

2 tablespoons of curry powder

1 tablespoon of garlic powder

sprinkle of black pepper

1/2 tablespoon of sea salt

1/2 old bay seasoning

(Optional)

jasmine rice, fried plantains, fresh avocado

Instructions

1. Sauté onions & garlic until its soft & fragrant.

2. Add curry powder to the veggies & cook for 2-3 minutes. (Curry powder has turmeric in it which is a raw spice & it needs to be cooked to release the flavors).

3. Add chickpeas & saute until slightly firm 3-4 minutes.

4. Pour in the coconut milk & let simmer on low heat for 10 minutes. This will build the sauce.

5. Check the curry & stir occasionally. Once sauce is thickened add in the remaining seasonings & turn off heat.

6. Plate up & serve with Jasmine Rice, Fried Plantains & Fresh Avocado or just eat it solo!

Blessed Buddha Bowl

I believe when transitioning to a more plant based diet, its best to have easy recipes on deck that you can cook up & not have to be stressed on what to eat. This bowl is super clutch for that.

Bowls are versatile & you can mix/match to your liking. Great source of plantbased protein, fiber & will have your energy levels high. A great recipe for beginner culinarians.

Serving Size

Serves 2 people, double recipe for more servings

Cook Time

Prep 15 minutes

Cook 20 minutes

Recipe

3 cups of pre-cooked brown rice

1 ripe avocado

1 ripe plantain

1 yellow squash

1 zucchini squash

1/2 cup of cooked black beans

1/2 cup olive oil

1 tsp of black sesame seeds (regular works as well)

1/4 cup of buffalo sauce

1 tbs of garlic salt

1/2 tbs black pepper

1/2 tbs of cumin

sprinkle of parsley

1/2 tbs of old bay seasoning

Instructions

1. Cook brown rice until done & set aside in a bowl.

2. Slice & fry plantains until soft but slightly crisp. Season with garlic salt.

3. Diced the zucchini & squash into small pieces & place on a sheet tray. Drizzle with olive oil. Season with garlic salt, black pepper, cumin, old bay seasoning.

4. Roast the veggies in oven on 400 degrees for 15 mins, or until soft but firm.

5. Add the cooked black beans to a small bowl & add garlic salt, black pepper, old bay seasoning, parsley mix well, set aside.

6. Add brown rice to a bowl, then add the roasted veggies, next add black beans, then the fried plantains.

7. Slice fresh avocado & add to the bowl. Drizzle the buffalo sauce on top, then sprinkle black sesame seeds & add a touch of parsley & old bay seasoning for color. Eat & enjoy!

Simple Superfood Smoothie

Smoothie’s have been my go to for awhile, especially for breakfast. Its a great way to start the day with something light & not heavy on the body. A great way to intake fruits & veggies.

You can do multiple variations of smoothies, mixing & using different ingredients. These are great for beginner culinarians, because they are very simple & take a short amount of time.

Serving Size

Recipe

1/4 cup frozen mangoes

1 frozen banana in half

1/2 cup frozen berries

1/2 cup of orange juice

a handful of pitted dates

1/2 cup of plant-based protein powder

1 tbs of agave nectar

1/2 tbs of cinnamon

1/4 cup of chia seeds

Instructions

1. Add frozen fruit to the blender.

2. Add dates, protein powder, cinnamon, chia seeds & orange juice.

3. Blend together until smooth but slightly thick.

4. Pour into a mason jar or cup of choice, drink & enjoy!

This is the recipe to make this dope Superfood Smoothie. Packed with antioxidants, protein, fiber, everything you need to keep your immune system on point. 10/10 add this to your culinary bag.

Homemade Healthful Hummus

Mediterranean food always been one of my favorite cuisines. Especially hummus since its so versatile & super tasty. Definitely top tier eats.

Hummus is made with chickpeas, which are high in plant based protein & a great source of fiber. I recommend this recipe for new beginner culinarians. Not many ingredients & you can pair this & use it as a base for other dishes.

Serving Size

Serves 4 people, double recipe for more servings.

Recipe

2 cans of chickpeas rinsed

1 1/2 tbs of lemon juice

1 clove of fresh garlic

2 tbs of olive oil

1/4 tsp of pink himalayan salt

1/4 tsp of black pepper

1/2 tsp of old bay seasoning

1/4 tsp of paprika

1/4 tsp of parsley flakes

2 slices of pita bread

Instructions

1. Pour chickpeas with a bit of the liquid into a blender.

2. Add lemon juice, garlic, salt, pepper, old bay seasoning.

3. Blend until its a thick but creamy consistency. 3-4 mins.

4. Pour into a bowl & refrigerate until chilled, (1-2 hrs if serving immediately) overnight.

5. Drizzle more olive oil on top with paprika & parsley.

6. Plate with pita chips, eat & serve!

This is the recipe to make this fire hummus. Amazing as a dip, great as a spread for avocado toast or to use on sandwiches. Super tasty, an easy 10/10.

Vegan Fire Fettuccine Alfredo

As an avid pasta lover, Alfredo been one of my fav’s since day one. Its just a certified classic a timeless dish. One of the best pasta dishes & always will be a go to for me.

I would say Alfredo is a great starting point for beginner culinarians who’s looking to master a simple recipe. You can build on top of your knowledge of this dish & do different variations as well. A great add to your culinary rotation.

Serving Size

Serve’s 4 people. Double the recipe to make more.

Recipe

1 pack of fettuccine pasta

1 can of coconut milk

1/2 cup of chopped yellow onions

1 tbsp of garlic chopped

1/2 cup of nutritional yeast

1/2 cup of vegan mozzarella cheese

1/4 cup of shiitake mushrooms sliced

1/2 tbsp of garlic powder

1/2 tbsp himalayan pink salt

1 tsp of old bay seasoning

1/2 tbsp of parsley

1 cup of grape seed oil

Instructions

1. Boil a pot of water for the pasta, sprinkle salt & grape seed oil.

2. Chop onions & garlic & set aside. Slice shiitake mushrooms & set aside.

3. Heat a sauté pan with grape seed oil. Sauté the onions & garlic until translucent. Add pasta to boiling water & cook for 10-12 mins.

4. Add the coconut milk, nutritional yeast & vegan mozzarella. Turn fire to low heat, let the sauce thicken while stirring consistently.

5. Drain water from pasta, the pasta should be “al dente” slightly firm but not too soft or mushy.

6. Add the pasta & a bit of the pasta water to the alfredo sauce.

7. Stir the pasta & sauce well together. It should have a creamy consistency. Add seasonings, salt & pepper.

8. In small pan sauté the shiitake mushrooms with a bit of oil until cooked evenly but not crispy. Add seasonings, salt, & pepper.

9. Plate the alfredo & top the pasta with the mushrooms. (Sprinkle parsley on top for extra decoration.)

10. Eat & enjoy!

This is the recipe to make this fire fettuccine alfredo. Add this to your culinary bag! Serve with a nice glass of champagne or white wine. Great for a dinner date or chill gathering with friends.

A breakfast blessing or post workout treat! These muffins satisfy your taste for something sweet and fuels your body mineral needs.

Farm fresh, nutrient packed ingredients give these muffins all the strength they need! The story behind the flour used in this recipe is that Sacred Sun Co-op grew winter peas right next to the rye at their farm. When it was time to harvest the rye, the crop of peas somehow got mixed in. Rye is an ancient grain filled with fiber, iron, potassium and more. Combined with the protein content found in peas, this is truly a unique farm fresh offering.

Servings: 6 medium size muffins

Cook Time: 1 hour

Ingredients

2 cups Prye flour from Sacred Sun Cooperative (or your flour of choice)

1/2 cup Hemp seeds

1/2 cup gluten free rolled oats

3/4 Coconut brown sugar

2 tbsp Sea moss gel

1 1/2 tsp Cinnamon

1 1/2 tsp Salt

2 tsp Baking Powder

1 1/2 cups Coconut milk

2 tbsp Maple syrup

2 cups fresh Berries (I used a cup each of blueberries and blackberries)


Recipe

  1. Preheat oven to 350° F.
  2. In a large bowl, sift together; flour, baking powder, cinnamon, salt, and a half cup of brown sugar. (Sifting helps combine ingredients, remove any impurities, and breakdown any clumps).
  3. Grind hemp seeds to a fine meal with a blender or food processor. Add to dry ingredients and mix. 
  4. Make a well in the middle and add in all the wet ingredients except the melted coconut oil. Combine slowly but thoroughly. As everything begins to come together, add in the coconut oil and mix together. Fold in your rinsed berries slowly. Let mixture rest while we prepare the baking sheet.
  5. Lightly oil a muffin tray. With your fingers, make sure all of the surface area is covered. Next, sprinkle a few teaspoons of flour over the muffin tray.
  6. In a medium bowl, mix together the leftover brown sugar with the rolled oats, and 2 tbsp of coconut oil.
  7. Pour your batter in to the muffin tray. Be sure to fill the tray no more than half way high with batter. Top the muffins with the sugar and oat mixture. Place in the center of your oven and bake for 25 minutes.
  8. Check the bread at 25 minutes to see if it has cooked all the way thru to the center. Use a toothpick or a clean small knife to see if any batter sticks to it when you poke it in the center. Keep it in the oven an extra 4 – 8 minutes if it needs to cook through any longer.
  9. When done, let the muffins cool in the tray for at least 7 minutes. Then pop them out on to a cooling rack and let them cool another 10 minutes till serving.

Plant Based Basil Pesto Pasta:TWO Ways!

Both of these creamy and filling pastas are a healthy and hearty meal made from 100% PLANTS!

You’re getting herbs, vegetables, healthy fats, and essential proteins all in one delicious dish. Leaving your savory taste buds beyond satisfied! These meals are made special with love and creativity for a tasty approach to holistic health.

This Basil Pesto Pasta BOTH WAYS is perfect for a quick and easy lunch or dinner. It simple enough to whip up after a long day or to keep you satisfied all day after lunch! These meals even serve as a great post-workout meal with all the protein packed into every bite!

I make this dish when I’m craving a filling pasta! It pairs perfectly with homemade garlic bread (plant based of course), a simple salad, and someone to share it with!

Pasta # 1

Servings: 4-5

Cooktime: 20 Min

Ingredients:

1 Box of Gluten Free (Optional) Angel Hair Pasta – I use Banza https://www.eatbanza.com/products/angel-hair

Sauce

Apprx 2 Handfuls of Fresh Basil

Apprx 1 handful of Fresh Spinach

1/2 an Avocado

2 Garlic Cloves

1 tsp of Fresh Lemon Juice

1/4 Cup of Hemp Seeds

1/2 Cup of Pine Nuts ( Can Substitute with Walnuts or Pecans)

1/3 Cup of Avocado/Olive Oil

Himalayan Pink Sea Salt to Taste

Black Pepper to Taste

Vegetable Topping

2 Yellow Squash Cut Vertically into Spears

1 Handful of Rainbow Cherry Tomatoes Cut in Halves

(Optional) Fresh Basil for Topping

Apprx 1 tsp Creole Seasoning (season to taste)

Apprx 1 tsp of Adobo Seasoning (season to taste)

Apprx 1 tsp Dried Basil (season to taste)

Apprx 1 tsp Black Pepper (season to taste)

Instructions

  1. Bring a large pot of water to a boil and add your box of angel hair pasta

2. Boil pasta for approximately 5-7 min till cooked aldente ( follow box instructions DON’T COOK FOR TOO LONG )

3. While your pasta is boiling add all your sauce ingredients into a blender (personal size works best) or food processor

4. Add water to thin out the sauce if needed

5. Blend until sauce is smooth and creamy

6. Turn the stove top heat down to low remove the pot and drain your pasta completely

7. Add your sauce to the pot and mix in on low heat till sauce is hot

8. Cover and remove pot from heat

9. In a medium pan on high heat add 1/4 cup water and (optional) 1/2 tsp of oil or plant based butter

10. Add your squash spears and mix in your seasonings

11. Place lid on the pan and let the veggies steam for 3 minutes

12. Add your cherry tomatoes and place the lid back on

13. Cook veggies till desired texture is reached

14. Plate your pasta, add your veggies on top, and top it off with fresh basil leaves!

Pasta #2

Servings: 4-5

Cooktime: 20 Min

Ingredients:

1 Box of Gluten Free (Optional) Rigatoni or Penne Pasta – I use Banza https://www.eatbanza.com/products/angel-hair

Sauce

Same Ingredients as Listed Above

Vegetable Topping

4 Cups of Fresh Broccoli

Apprx 1 tsp Dried Basil (season to taste)

Apprx 1 tsp Creole Seasoning (season to taste)

Apprx 1 tsp Black Pepper (season to taste)

Apprx 1 tsp of Adobo Seasoning (season to taste)

Instructions

  1. Bring a large pot of water to a boil and add your box of penne pasta

2. Boil pasta for approximately 7-9 min till cooked aldente ( follow box instructions DON’T COOK FOR TOO LONG )

3. While your pasta is boiling add all your sauce ingredients into a blender (personal size works best) or food processor
